Languedoc: Limoux.

Perhaps not that famous outside of France (although many of the wines recommended here are well distributed in Europe and North America), the Limoux region stretches mostly to the south, west and north of the visit-worthy town of Limoux in southwestern Languedoc, about half an hour south of Carcassonne. The vineyards are often planted on hillsides enhancing the slightly cooler climate this area enjoys, which is home to some classy sparkling wines, Chardonnay, Chenin Blanc and Pinot Noir among others.

Languedoc: Saint Chinian

The Saint-Chinian region lies between Béziers and Minervois and northwards to the jagged hills at the bottom of the Massif Central. It stretches from the villages of Quarante to Vieussan south to north, and from Murviel-lès-Béziers to Ferrières-Poussarou east to west; a vast area of about 40 by 30 kilometres. So, the idea that all wines produced in this appellation represent and express one distinct namesake terroir or 'taste of place' is a stretch.

Rosé: Languedoc vs Roussillon.


Is there a big difference in rosé from the Languedoc and Roussillon? Winemakers in both regions tend to have the same red grape varieties - mainly Grenache, Syrah, Carignan, Cinsault (less so in the Roussillon) and Mourvèdre - and production techniques don't vary much from one place to another. Except for the particular style of rosé intended in terms of colour (deeper redder or paler pink), flavour and 'seriousness' (richer fruitier fuller or more aromatic zestier lighter).

Languedoc - Fitou: Domaines du Vent, Bertrand-Bergé, Lérys & Château de Nouvelles.

The Fitou region nudges against the Corbières hills at the southern edge of the Languedoc before you cross over into the Roussillon, and is split into two parts divided by a chunk of the Corbières appellation in what might have been the middle of it (viticultural history, village politics). In simple terms, the seaside bit lies around Fitou itself and just to the north; and the hillier rockier inland bit is centred on Mont Tauch and the villages of Paziols, Tuchan and spreading north to Villeneuve les Corbières.

Bubbly and white wines of the moment

Château Viranel Intuition blanc 2020 Saint-Chinian Languedoc (60% Grenache blanc, 15% Roussanne, 20% Vermentino, 5% Bourboulenc, 13.5% abv): This delicious mix of southern French grape varieties undergoes a modest 15% of the blend fermented in barrels (and all the better for it) with the completed wine stored and stirred on the yeast-lees for three months to maximise flavour and texture.

Whereas the fifty-odd 'white wines of the cosmos' in my previous feature were arranged by store, these forty red and rosé tips have been grouped by good old-fashioned grape variety (or combinations of). Once again, no apologies offered for, this time, an irrational amount of Grenache, including GSM (Grenache / Garnacha, Shiraz / Syrah and Mourvèdre blends), as well as Pinot Noir...

Languedoc 2015: "a fleshy vintage..."


I get lots of emails around this time of year crammed with lengthy serious vintage reports and piled high with photos of happy harvesters at work, handsome bunches of grapes, fermenting juice, winemakers sniffing it and barrels awaiting... Nadia and Cyril Bourgne at Domaine La Madura in Saint-Chinian have simply declared this year's wines from their neck of the Languedoc so comfortingly "fleshy," that the Madura team just couldn't resist stripping off in their new shiny winery. Languedoc rosé

Here's another "opinion" blog post on the Languedoc written for Harpers' Wine & Spirit (goes there, published 5th May), this time focusing on rosé. After the words, you'll find over 30 worth-sipping dry rosés I tasted recently on a concentrated trip to the region...
"You wouldn't be surprised to hear that most (over three-quarters) of what the Languedoc produces and sells is red wine – nothing earth-shattering in that statement – but an obvious plus-side to having lots of Mediterranean red varieties planted, is the potential to make increasing amounts of rosé to match a growing thirst for the pink style. Couple this with the right technology and winemaking for producing good (dry) rosé and a different way of thinking at the outset - i.e. preselecting certain vines, plots, picking dates for this style rather than it being a second-choice by-product - and things are looking up. A massive quantity of decent, often varietal, rosé is already being syphoned off into IGP 'category' wines (used to be Vins de Pays - these weren't available for tasting for some reason); and I've already talked about what the catch-all Languedoc AOP has to offer on the red and white front – the same applies to rosé. There are also sometimes high-quality rosés coming from just about all the other Languedoc appellations – rosé now holds a 12% share – some of them better known than others.

Corbières, that vast hilly region sitting on the Languedoc's western side snuggling up along the top of the Roussillon, sits in the former camp. And here, good rosé isn't anything new, there just seem to be more and more producers making very nice ones: full-bodied, fruity, dry and crisp and essentially based on Syrah, Grenache and Cinsault with the odd dollop of Mourvèdre or the 'other' Grenache varieties, white and grey. Corbières 2014 rosés from these wineries particularly caught my eye at last week's “Terroirs et Millésimes en Languedoc” showcase held in the region: Château Beauregard-Mirouze, Terre d'Expression, Château Saint-Estève, Château les Palais, Château Ortala and the star Clos Canos (one of the winemakers credited with making the first serious rosés in the region); all of them sitting comfortably in the £5.99 to £7.49 bracket.
Staying out west, lying to the north of Carcassonne, the Cabardès appellation still has something of an identity problem, and the best reds usually come from the same three or four names; but I was nicely surprised by the rosés on offer, all from the fresh and zingy 2014 vintage. Like the reds, these are all variations on a theme of Cabernet Sauvignon, Cabernet Franc, Grenache, Syrah, Malbec and Merlot with some Cinsault. These four rosés would hit similar £5-£7.50 price points, except a grander more ambitious part barrel-aged rosé by Vignobles Lorgeril / Château de Pennautier (£8.99): Château Ventenac, Vignerons du Triangle d'Or and Château Jouclary.
Moving east to Minervois, another sweeping red wine heartland with up-and-down quality, where there also appears to be an accelerating trend to making big dry rosés. Quite a few tasty ones to be found here from the just-released 2014 vintage, such as examples from Château du Donjon, Château La Grave (both £6.50-£7), Château Borie Neuve (dearer at £10 although very good and comes in a smart heavy-bottomed bottle: photo above) and Château Sainte Eulalie (£6.29), built on Cinsault, Grenache and Syrah.
Still moving eastwards, the neighbouring sprawling Saint-Chinian region and then more compact Faugères, to the north of Béziers, both home to some of the Languedoc's best red wines, have integrated rosé into their respective appellation make-ups. And many producers in both areas are taking it very seriously, having tried several delicious and altogether more structured examples last week. These tend to be on the slightly dearer side though (approx retail £6.99-£9.99), perhaps because of lower yields or not wanting to have too much of a price disparity between their reds (and now whites), but would suit independent merchants who could hand-sell them. Here are a few names that did it for me. St-Chinian (all 2014): Château Viranel, Château La Dournie, Château Bousquette, Domaine Moulinier, Laurent Miquel / Château Cazal Viel and Château Coujan (one of the few with majority Mourvèdre). Faugères: Domaine des Trinités, Domaine du Météore and Domaine l'Arbusselle among others..."

Corbières rosé all 2014 vintage
Château Beauregard Mirouze Tradition (Syrah, Grenache) - Fairly intense and crisp with floral red fruits and nice bite. €7
Terre d'Expression Fortes Tetes (Grenache, Cinsault, Syrah) - 'Gummy' and zesty, fair depth and length, gets more aromatic on the finish. €4.90
Château Saint-Esteve (Grenache, Syrah, Cinsault) - Yeast lees-y and crisp, again very tight and closed up but has substance for a rosé; a foodie. €5.50
Château les Palais Tradition (Grenache, Cinsault, Syrah, Mourvèdre) - Very tight and crisp mouth-feel, a bit too fresh perhaps although there's something underneath. Trying be very Provence. €6.50
Château Ortala (Syrah, Grenache) - Juicy with 'boiled sweet' aromas, gummy extract on the palate, fresh but less tart than many of the others with more rose petal and red fruit characters. €7.70
Clos Canos (Grenache noir, Grenache gris, Grenache blanc, Syrah) - Very juicy and tasty, 'gummy' and 'chalky' almost, fresh and zingy yet again has very nice aromatic rose and red fruits. Classy. €7
Château du Roc La Grange (Syrah, Grenache) - Gummy and lively, not bad for the price. €4.70
Château Le Luc - pale Provencesque style, nice and zippy and crisp with it.

Cabardès rosé 2014
Vignobles Alain Maurel Château Ventenac Cuvée Diane (Cabernet Sauvignon, Cabernet Franc, Grenache, Syrah, Malbec) - Lively gummy style, crisp and tight mouth-feel with subtle rose petal and redcurrant, zingy finish. €7.50
Vignobles Lorgeril Château de Pennautier 'Terroirs d'Altitude' (Grenache, Syrah, Merlot, Cabernet Sauvignon, Cinsault; small portion barrel-aged) - Tight and zesty palate with yeast-lees notes, very crisp; should be quite good. €10.50
Vignerons du Triangle d'Or Notre Dame de la Gardie (Syrah, Cabernet Franc, Grenache, Cinsault) - More currant-y and fruity with light 'celery' and floral tones plus red fruits too, crisp zingy finish. €4.60
Château Jouclary (Cabernet Franc, Cinsault, Grenache) - Very zesty, 'chalky' zingy texture, elegant and tight mouth-feel; starts to open up a bit on the finish. €5.50

Minervois rosé 2014
Château du Donjon (Cinsault, Grenache, Syrah) - Zingy elegant style, a little closed up and lees-y but should round out nicely. €6
Château La Grave Expression (Syrah, Grenache) - Juicy and elegant, light red fruits and rose petal, 'chalky' zesty finish; stylish. €6.40
Château Borie Neuve Marie (Grenache, Cinsault) - Fragrant rose petal aromas, tight and zingy and tasty, long and elegant vs a touch of weight too. Stylish even if quite expensive: comes in a chunky heavy bottle (photo above). €12.90
Château Sainte-Eulalie (Cinsault, Grenache, Syrah) - Very tight and zingy style with crisp bite, almost like a white but has hints of redcurrant. €5.40

Saint-Chinian rosé 2014
Domaine Marion Pla Petit Bonheur (Cinsault, Grenache, Syrah; organic) - Tight and steely palate vs subtle rose and red fruits, crisp and long style. €6.70
Château Viranel Tradition (Syrah, Grenache, Cinsault) - Bigger fruity style, powerful and rounded vs tight and crisp to finish. Good. €8
Château La Dournie (Syrah, Grenache, Cinsault) - Sweet berry and quite lush creamy raspberry flavours, chalkier crisper finish; nice foodie rosé. €6.10
Château Bousquette Rosalie (Grenache, Syrah; organic) - Zingy zesty and intense, light rose petal tones, steely bite vs ripe fruit notes underneath. Very nice. €6
Château St Martin des Champs Camille (Syrah, Grenache) - Steely and lean palate at first vs light red fruit notes, has fair depth though with good length and bite. Quite dear: €10.
Domaine Moulinier (Syrah, Grenache) - Very lively and juicy with red fruit and rose aromas, super crisp 'mineral' finish. Yum. €5.80 good value.
Laurent Miquel Château Cazal Viel vieilles vignes (old vines: Syrah, Grenache, Cinsault) - Subtle steely gummy and chalky mouth-feel vs aromatic floral fruit, needs a few months to open up. €8.90
Château Coujan Tradition (Mourvèdre, Syrah; organic) - Lively lees-y start then ripe red berry vs very zesty and crisp, quite big too vs tight steely and long finish. Good stuff. €6.20

Faugères rosé
Domaine des Trinités 2013 (mostly Syrah + Carignan; biodynamic) - fairly rich and fruity with underlying dry 'mineral' side, powerful yet with attractive bite. Good, drinking now. €6.50
Domaine du Météore Les Léonides 2014 - crisp and steely with subtle floral red fruits, lively dry finish; also quite stylish. Probably about £9-£10 in the UK.
Domaine l'Arbussele Envol 2014 (GSM, 13% abv) - lively and aromatic with red fruits and roses, tight and zingy palate with delicate yet long finish. Very nice dry rosé: this was his first vintage.

These three were my favourites from a small line-up of 2014 rosés tasted outdoors - in the shadow of the Peak so to speak - in a hurry: Château Valcyre (mostly Syrah + Grenache - about €7), Mas Bruguière (Syrah 50%, Mourvèdre 40%, Grenache 10% - €8.50) and Pierre Clavel's Mescladis (60% Syrah, 20% Grenache, 20% Mourvèdre; organic - €7-€7.50, UK £9.60).

Other rosés that crossed my path favourably (mostly):
Clos des Nines Pulp 2014 Pays d'Oc (Grenache, Cinsault) - good combo with chorizo type saucisson.
Gérard Bertrand Château La Sauvageonne 2014 Languedoc (Syrah and Grenache mostly; 6 months in barrel) - a tad oaky, but really came into its own with the lobster ravioli in bisque sauce served at Le Jardin des Sens in Montpellier (name dropping, moi). Hopelessly expensive though at €39!
L'Emothion d'Encoste 2013 Languedoc - still restrained at first (although very cold), classic dry rosé style which was an admirable match for a variety of charcuterie.

Languedoc: Château Cabezac, Minervois


This charming swanky 75 hectare estate hidden away outside the wee village of Bize-Minervois (between Capestang and Homps on the region's northern edge with the bottom tip of the Saint-Chinian appellation, if you get what I mean: or look at a map...) was bought by Gontran Dondain in 1997, who must have invested a good deal of time and wonga into restoring the property and vineyards. The newest developments are on-site apartments and spa complex to complement their hotel and seasonal restaurant (open May to end Sept). What self-respecting poshly renovated château in the Languedoc doesn't have this nowadays!
Some good wines being made here but their “top” reds are quite pricey, although 2009 wasn't perhaps the best vintage to judge them on (hot and dry, many of them are now looking a bit clunky and out of balance with austere tannins), so I look forward to tasting some more recent vintages in the future. 2013 Cuvée Alice white (Maccabeu, Vermentino, Roussanne, Grenache blanc; 14% abv) – touches of honey/banana and yeast-lees vs a crisp 'mineral' side, juicy and refreshing with some roundness too. €7.30 cellar door / £8.77 UK.
2012 Rosé (Syrah, Grenache; 13.5%) - nice red fruity vs creamy style, a hint of rounded mouth-feel vs crisper finish. €7.30 / £8.77
2011 La Tradition red (Carignan, Grenache, Syrah; 14.5%) - attractive sweet fruit with perfumed floral tones, crunchy berries vs riper liquorice etc. with powerful weighty finish. Nice style. £8.77
2009 Carinu (Carignan; 15%) - maturing savoury and smoky vs a tarter herbier side, power vs bite on the palate, still quite tannic with lingering meaty development; those tannins are a bit too “09” but it's an interesting red I suppose. €12.80 / £11.48
2009 Cuvée Arthur (Mourvèdre, Syrah, Grenache; 14.5%) - fairly oaky smoky and extracted with structured powerful mouth-feel, that oak lingers a little combined with oomph, savoury fruit and a bitter twist of tannin. One for sipping gently around the round table no doubt. €17.10 / £15.11
2009 Grande Cuvée Belvèze (Syrah, Mourvèdre, Grenache; 14.5%) - again showing plenty of dark chocolate oak with grippy punchy palate, better sweet fruit coming through vs similar bitter twist of tannins. €27.80 / £21.51

Languedoc & Roussillon: Domaines Auriol

Les Domaines Auriol, brainchild of Claude Vialade (pic.) who set up the company in 1995, is a producer and property owner with organically run vineyards in Corbières, operates as a broker buying and selling other estate wines and varietals and also offers a winemaking service sourcing tailor-made wines for clients from a whole host of partner wineries across the big south. Apparently they export 90% of production, so it shouldn't be too difficult to find some of their wines in a country near you. I was told Myliko is the UK importer but couldn't find any obvious Auriol wines on their site.


More info @ www.saint-auriol.com, where I found Claude's imaginative and amusing catchphrase: "Redécouvrir l'artisanat industriel," roughly translating as "Rediscover mass-produced craftsmanship," obviously a contradiction in terms but I think she's poking fun at snooty wine people who believe all big is bad. I remember seeing signs for "pain industriel" in French supermarkets, used in a patronising if not deadpan accurate sense like that. Anyway, here's a small selection of her wines sampled over the last few months.

2012 Les Flamants Picpoul de Pinet – enticing yeasty edges, oily vs crisp mouth-feel, concentrated and stylish dry white.
2012 Belles du Sud Cabernet Franc – nice Cab Franc styling showing red pepper notes vs a smokier and richer side.
2012 Domaine Mirabau Côtes du Roussillon (Grenache, Syrah) – a tad 'volatile' and soupy perhaps but has nice soft rich palate.
2011 Intense de Claude Vialade Languedoc (Syrah, Grenache) – attractive ripe dark fruit style with a hint of spice and grip vs lusher mouth-feel.
2011 Croix d'Aline Saint-Chinian (Syrah, Grenache) – lots of lovely sweet cherry and liquorice fruit, ripe and soft palate with complex smoky maturing notes.
2013 Château Cicéron rosé - attractive style dry rosé with creamy red fruits vs lees-y and crisp mouth-feel.

Languedoc & Roussillon: "wines of the mo"

Picked out from a South of France (goes to 'Sud de France Top 100' site, some of these wines were competition winners) tasting I did a few weeks ago for the www.niwsi.co.uk in Belfast, these wines were probably my favourite half-dozen from an interesting and diverse line-up, just for the pure pleasure of plonking a few tasty words out there in the blogosphere...

Domaine Denois 'Sainte Marie' Limoux blanc 2010 (single site "high-altitude" Chardonnay, barrel-fermented/aged) - the best of the three whites we tasted, I found it pretty much as I remembered it as per this note here (including more info on JL Denois and the wine). Touch of class. €15 cellar door.

Château de Cazeneuve 'Cynarah' Pic Saint-Loup 2011 (Cinsault, Syrah, Grenache) - attractive juicy ripe black cherry and liquorice fruit, soft tannins and rounded mouth-feel with a touch of earthy spice and mint. £12.95 the Wine Society. Previously on Cazeneuve.

Domaine Modat 'Comme Avant' Côtes du Roussillon Villages Caramany 2010 (Grenache, Syrah, Carignan from some of the oldest vines; half of it aged in new oak for 16 months) - a popular choice, I've already reviewed it here where you'll find more about the producer too. Nice mouthful of Med red, a tad expensive though. James Nicholson £14.95 / €21.80.

Château de Lastours 'Grande Réserve' Corbières 2008 (Syrah, Carignan, Grenache, Mourvèdre: oldest vine selection 30 to 40 y.o; 75% of the blend aged 1 year in French oak) - attractive maturing smoky savoury and dried fruit side vs concentrated and still fairly firm structure, well balanced too. c. €18. More Lastours here.

Laurent Miquel 'Bardou' Saint Chinian 2008 Grande Cuvée (mostly Syrah from selected sites on the Cazal Viel estate, 14 months in French oak - 55% new) - another pretty serious red I'd tasted previously (goes to my special supplement on St Chinian inc. profile on Miquel and notes on several wines), showing a fair bit of oak but it's concentrated and structured with nice fruit. £16 Excel Wines, €20.99 Dunnes.

Domaine Cazes Rivesaltes ambré 2000 (100% Grenache blanc fortified to 16% abv, aged 7+ years in old tuns, 118 g/l residual sugar) - classic style with enticing oxidized walnut/pecan notes, complex flavours with nice sweet vs tangy and savoury finish and a bit of 'cut'. Liberty Wines approx retail £15 half-bottle. I've published an 18-page Languedoc special supplement on lesser-known Saint-Chinian wine country, following an exciting trip there at the end of last year, which is not viewable on this blog! Roussillon and Languedoc: "festive sweeties and reds, with or without chocolate" (part 2)

Further to these recent words of wisdom on my WineWriting.com blog: Spain v Australia: festive sweeties and reds, with or without chocolate (goes there naturally), which also includes a little insight into fine chocolate making and the different types... Here are some more "festive sweeties and reds, with or without chocolate," this time sourced from the Languedoc and the Roussillon. When talking about "wine with chocolate," many people - okay, wino people rather than normal people at least - think of rugged Roussillon country and its sometimes sublime red vins doux naturels or fortified sweet reds based on Grenache, especially Banyuls from the southeastern corner bordering Spain or Maury in the region's northern flank nudging up against the Corbières hills.

Mas Amiel is arguably the most famous name in the Maury area (with suitably celeb prices to match, you might be tempted to add) and particularly well known for its old vintages. We were treated to their 1980 (in magnum no less, a special millennium bottling aged for nearly 20 years in demijohns and large casks beforehand; 16.5% abv) at the 'wine with chocolate' tasting event featured in the post mentioned at the top of the page (follow that link for more info). I've tasted this vintage before in situ (goes to profile and notes on MA penned in 2007, 2009, 2010 and updated earlier this year), although not sure if it's exactly the same wine, as that 1980 had one of their regular 'Millésime' labels, implying vintage style i.e. aged for a relatively short time in cask and the rest in bottle. In any case, the 1980 "millennium" was delicious and a fine match for the Co Couture chocs in front of us, especially the chilli flavour actually. Browning in colour with intriguing meat gravy vs liquorice nose, rich and concentrated with lush mouth-feel vs nice bite and developing savoury flavours; still alive with complex long maturing finish. Yum. £85 magnum.
Also from Maury, made by the worth-visiting Vignerons de Maury co-op winery found in the village, comes their Cuvée Centenaire (specially brewed in 2010 to celebrate 100 years, obviously; 16% abv), which was quite orangey brown with 'volatile' red-Madeira notes and sweet dried fruits vs meaty mature cheesy palate; particularly good with the ginger chocolate. About £23. More of their wines are HERE (St-Bacchus Awards) and probably elsewhere on the blog too. Banyuls was well represented by one of its top VDN producers Domaine du Mas Blanc with their 2000 Vieilles Vignes label (old vines; 16.5% abv): oxidised intricate mature-cheesy nose, lush vs savoury palate with complex toffee and dried raspberry flavours, long smooth finish. The plain choc and sea salt flavoured one almost freshened up the wine, not so good with the ginger though funnily enough. £27 approx. More on DMB HERE.
Moving on to a few 'regular' Roussillon and Languedoc reds, not deliberately tasted with chocolate (but might have been unintentionally) in recent weeks. Firstly, a pair from Naked Wines. Benjamin Darnault's 2012 La Cuvée Réservée Cotes du Roussillon Villages (Grenache, Syrah; 14.5% abv, bottled in the Aude though?) is deep purple black in colour, a 'modern' style big fruity and spicy red; peppery blackberry with firm grip vs 'sweet' rounded palate, nice dry texture vs ripe berry fruit, liquorice and spice with punchy alcohol on its lively finish. Attractive good+ co-op level red, okay at £8.49 ('Angel' price) but not worth £11.49 ('normal': more here about Naked's pricing). Same could perhaps be said about their 2012 Le Petit Train Syrah (£8.25 or £10.99) made by Katie Jones, although this wine was apparently specially commissioned by Naked after Katie was sabotaged by some jealous thug, who broke in and poured away an entire vintage of her white wine. So, there's an "investment in people" type story behind it (as is Naked's self-acclaimed style generally). Anyway, it's a very nice red showing touches of sweet coconut oak layered with really ripe black cherry/olive even, soft fruity and rounded mouth-feel with a hint of herby spice vs a light bitter twist of tannins/acidity and blast of warmth. Kept well after opening too, turning softer with the oak less obvious and nice sweet black cherry/olive fruit vs light grip.
Finishing off in Saint-Chinian in the Languedoc back-lands, I've picked out just a few of my favourites from a trip last month, which were winners in a "Grand Cru selection" competition I was on the tasting panel for. Laurent Miquel Bardou 2008 (100% Syrah) – still quite toasty coconut with spicy dark fruit vs nice meaty edges, the oak melts into it adding a touch of chocolatey texture/flavour, nice tannins and concentration for a 2008; still quite young and structured with substance. Good stuff. €19
La Grange Léon D'une main à l'autre 2011 (Syrah, Carignan, Grenache) - herbal red pepper, liquorice and perfumed white pepper; quite lush with ripe berry fruit, soft and approachable with bit of weight, freshness and length. Nice now. €16

Domaine la Linquière 310 La Sentenelle 2011 - lovely wild garrigue notes (= reminds of heathland flora!) plus sweet liquorice vs peppery fruit, soft tasty and quite elegant finish. €18
Borie la Vitarèle Les Crès 2005 (Mourvèdre, Syrah) - savoury touches vs dark cherry, nice 'chalky' tannins with a touch of freshness, tight and elegant, still relatively young really, lovely savoury vs liquorice and spice finish. €18.50

Above prices are cellar door in France, so these are all towards dear wines although among the producers' top cuvées; or would be in the UK, Ireland or US once you slap on eye-watering taxes!

Spain v Australia: festive sweeties and reds, with or without chocolate

Well, not exactly one against the other, but a way of introducing five very different wines from these two diverse wine-lands ranging from essentially dry red to sweeter to very very sweet, started as white ended up brownish. First off, an aged dry red from Penfolds, the 2006 vintage of their Bin 28 Shiraz (about £14 in the UK). This was one of a few stars sampled with different types of chocolate at a recent Northern Ireland Wine & Spirit Institute 'wine with chocolate' tasting, with Deirdre McCanny of Belfast chocolatier Co Couture (a tad more about chocolate making etc. follows the wine blurb). This particular Penfold's 'Bin number' has been going since 1959 apparently, and the 2006 wasn't really showing its age that much. Powerful spicy nose with eucalyptus tones even, sweet blackberry and maturing savoury notes, has a fair kick still vs attractive spice and richness vs meaty flavours and softening tannins. Nice with the 'plain' Madagascan chocolate and the 'smoked sea salt' flavoured one even (read on...); or have with the usual red meat suspects I'd imagine.


Moving on to the Rutherglen region in north-eastern Victoria, which is famous for producing one-off sweet Madeirized style wines - deliberately oxidized by a special maturation process - fortified with alcohol (like Port and Sherry) and keeping hold of a large dose of natural sugar. Two different types are mentioned here, a 'Tawny' (the Portuguese won't like that) and a Muscat. Jen Pfeiffer is one of Naked Wines' bespoke winemakers, who's come up with a quirky little number called The Diamond 10 Year Old Rutherglen Tawny (19.8% abv). This showed cooked raisins and pecan nut on the nose, caramel fudge and toffee, oxidized Madeira notes but redder fruit, tangy toasted nuts vs sweet raisins vs punchy alcohol; quite balanced in the end despite all that going on (for a long time). £11.99 'Angel' price, £15.99 'normal' (more about their pricing here). I tasted this one at home recently (still am, a couple of mouthfuls at a time is enough, and it keeps for weeks) rather than at that choco event; try it with a selection of cheeses or mince pies.
Campbell's is a name almost synonymous with this particular style of sticky fortified wine, especially their legendary Rutherglen Muscat (17.5% abv - £13.99 Direct Wine Shipments and generally available in many specialist shops). Probably even sweeter than the tawny, with around 190 grams per litre residual sugar, this had a full-on cooked sultana and marmalade nose, very sweet and lush palate with treacly vs aromatic fruity flavours, the Muscat character does come through all that in the end lending a fruitier, dare I say 'fresher' side. The chilli chocolate worked well giving it a bit of bite; and similarly, the ginger choc also fought back! Was a bit weird with the sea salt one though.
Carrying on with the intense sticky theme, Sherry country in southwestern Spain is responsible for a variety of tasty styles of this fortified aged wine, from very dry (Fino, Manzanilla) to super sweet, such as Gonzalez Byass' extraordinary Matusalem (20.5% abv). Their press blurb describes it thus: "Matusalem is a premium cream sherry aged for 30 years in the Gonzalez Byass bodega in Jerez, Andalucia. Fine Oloroso sherry is blended with Pedro Ximenez (that's a variety not some bloke who works there, whose bunches are dried out lying on mats after picking, massively concentrating the natural sugar) and aged in American oak barrels where the flavours and aromas concentrate."
This is what I scribbled down after trying it a few times at home over a period of days with and without food (makes a nice dessert just on its own, or with dried fruit and nuts perhaps) - again good with mince pies, could be a substantial match for Christmas pudding or smooths the edges on blue and hard mature cheeses; and what about pouring some over vanilla ice cream too? Powerful 'volatile' Madeirized nose with cooked/oxidized and really toasted walnuts and molasses tinged with an almost extremely reduced wine/meat gravy edge! Caramelized soy sauce too vs mega dried fruit sultana/raisin cocktail, huge palate with the same array of flavours plus very nutty sweet walnut/pecan, nice kick/bite cuts through it a little, very intense tangy vs sweet finish. Wow, extreme wine or what. Tastes the same a few days later, another one that will keep for a week or three probably. Luckily comes in half-bottles - £19.99 from Ocado, Waitrose, Tesco, Majestic, Fortnum and Mason, Harvey Nichols, Cambridge Wines and other independents and sherry specialists.
Staying in Spain, I'll come back to an unusual slightly sweet Merlot from Priorat, found down the coast from Barcelona and inland a little on the hills, made by Joseph Puig called Dolc de Lluna 2006 (15% abv, £22.50 DWS). Nicely wacky mix of maturing meaty leather notes and dark vs savoury fruit, had a bit of grip still vs rounded mouth-feel with some sweetness and kick. Different for a Merlot. Again stood up well to the stronger flavoured chocolates even, ginger and chilli, as well as a nice match with the 'plain'.

Talking of that Co Couture chocolate, it seems like a good way of ending this post with a few facts and figures about making fine chocolate gleaned from Deirdre's introduction (hopefully accurate, as it was all scribbled down in a hurry). Cocoa beans are bigger than I'd imagined, although shrink when roasted turning them brown too, as are the pods, which resemble elongated coconut shells without the hair crossed with a shrivelled melon! There are three different varieties used for making choco: forastero, the biggest pod mainly grown in western Africa; Trinitario, a hybrid of the latter and Criollo that's smaller with rounder ends and more susceptible to weather and disease. Criollo is considered the finest, and there's a resurgence in growing this one, Deirdre said, although it's difficult to grow. There's no sugar in the beans but is in the pulp around them, so they're fermented together imparting more flavour into the beans. These are then dried and roasted.
We tasted three pieces of raw beans, all different with bitter vs sweet profile. It should have intensity and tannins but not particularly bitter; if a bean tastes heavily roasted, it means it's poor quality. The final roasted bean is about 50-50 cocoa solids and cocoa butter, which is pressed and separated. The butter is a fat, which does smell like cocoa-infused butter and melts in your hand. For dark choco, they then take 70% cocoa solids (any fine chocolate should be minimum 70%) and add 30% cocoa butter, sugar and vanilla (best fresh). There shouldn't be any other kind of fat, although you can add the useful soya lecithin nowadays. For milk chocolate, you need the cocoa solids blended with milk powder then the rest of the ingredients as above. And white chocolate is just cocoa butter and the rest without the cocoa solids. The solids are first refined to make a smooth paste with no particles. Typically, the darker the colour, the higher the amount of solids although this isn't always the case, e.g. from Madagascar, which can have lovely reddy brown hues.
Rubbing your thumb on the back of the chocolate helps release the aromas. Snap it - a nice 'clean' snap means it's high in cocoa butter. Let it melt in your mouth on your tongue to get more of the flavours. We tried four different types with various origins and styles, although it's not totally clear from my notes what they were each called, so I'll just say I was surprised how different they all looked and tasted (they were all 70% dark), and no real bitterness there either. There are essentially two production styles though, French and Belgian/Swiss (plus everyone else). The French like to taste the chocolate and use less sugar and more butter (better for cooking chocolate too for melting) than the Belgian/Swiss makers.
